We love love love ❤️ pizza. It’s something I lamented about giving up when we decided to go Low Carb/Keto.
It was one of those hey babe can you make…..moments. This is the second variety of this that we made. The sky is the limit as far as low carb/Keto toppings go. Be creative! Think breakfast pizza….hmmmm 🤔💡
Ok so here’s what you came for….the recipe.
Low Carb Bacon Cheeseburger Pizza
Crust:
1/4 c grated Parmesan cheese
3 whole eggs beaten
1/4 c coconut flour
1 c shredded mozzarella cheese
1 c shredded Mexican blend cheese
Saveur Pizza Spice or Garlic Mix
Black pepper
Toppings:
1/2 c or so of marinara sauce (I used jarred but to save carbs, make your own)
1/4 pound lean ground beef
1/2 pound of sliced bacon, no nitrates/nitrites, crumbled
1 can of sliced mushrooms, drained
Half of a medium red onion, thinly sliced
1/2 cup pickled chopped
Shredded cheddar cheese
Shredded mozzarella cheese
Mix the crust ingredients together and press into a preheated, large cast iron skillet. Bake at 350 for 20 minutes (trust me, don’t skip this step. Your crust will stick if you don’t do this)
Top with sauce, toppings and then cheese. Bake at 400 for another 30 minutes or so, depending on your oven.
Once you pull it out of the oven, drizzle with prepared mustard (the yellow kind) and let it sit for 15 minutes to so before cutting.
Cut into 8 slices and enjoy!
