Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 2 stalks celery sliced
  • 8 cups chicken broth
  • 2 cups cooked chicken shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions
 

  • Heat Oil: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  • Add Vegetables: Stir in the sliced carrots and celery, cooking for another 5 minutes until they start to soften.
  • Pour in Broth: Add the chicken broth, shredded chicken, thyme, salt, and pepper. Bring the mixture to a boil.
  • Cook Noodles: Once boiling, add the egg noodles and reduce heat to a simmer. Cook for 8-10 minutes, or until the noodles are tender.
  • Serve: Remove from heat, garnish with fresh parsley, and enjoy your comforting bowl of chicken noodle soup
