Grilled Honey Lime Shrimp Skewers

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Skewers if using wooden skewers, soak in water for 30 minutes before grilling

Instructions
 

  • Prepare the Marinade: In a bowl, whisk together the honey, lime juice, olive oil, minced garlic, salt, pepper, and red pepper flakes until well combined.
  • Marinate the Shrimp: Add the shrimp to the marinade and toss to coat. Cover and refrigerate for 30 minutes to 1 hour to allow the flavors to meld.
  • Prepare the Grill: Preheat the grill to medium-high heat. If using wooden skewers, ensure they are soaked to prevent burning.
  • Assemble the Skewers: Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking.
  • Grill the Shrimp: Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
  • Serve: Remove from the grill and serve immediately with extra lime wedges and your choice of sides.
