Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, pepper, and oregano.
Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes in the refrigerator.
Preheat the Grill: Heat your grill to medium-high heat.
Grill the Salmon: Remove the salmon from the marinade and place it skin-side down on the grill. Cook for 4-5 minutes, then carefully flip and grill for another 4-5 minutes or until the salmon flakes easily with a fork.
Serve: Remove the salmon from the grill and garnish with lemon slices and chopped parsley. Serve hot with your favorite side dishes.
